You can look at the output of openconnect. Or try to reach a server
which is on the VPN. Or use 'ip addr' or 'ip route' to show interface
addresses and routes respectively.
If you're using NetworkManager to connect then you'll have a graphical
indication that you're connected to the VPN.

Can you run /etc/vpnc/vpnc-script directly?
Maybe some security check is preventing the root user from running a
script which is writeable by any unprivileged user?
