Yes, the default config works as before.

Nothing will change. dnsmasq is and was the default DHCPv4 server in LEDE.

If you are using a development snapshot, you should expect that stuff
breaks/changes from time to time. If there are any groundbreaking
changes, they will be most likely mentioned in the release notes of a
_stable_ release.
