Well, the log shows that the device is a Winbond W25Q128 (a NOR flash device). Assuming it is the W25Q128FV, the erase times could be (depending on the erase block size used) up to

Block erase time (64 KB) 2 seconds x 256 = 512 seconds
Sector erase time (4 KB) 400 ms x 4096 = 1638 seconds

Assuming that only part of the device must be erased, 300 seconds doesn't seem to be excessive. If the device is erased in 4 KB sectors, this may indeed take a very long time.

With NOR flash, it usually pays off to use the largest erase size possible (see above) if you need to erase almost everything.
