More: Something seems to go wrong when I switch the router over to being an access point. So either it's user error, or there's a bug. 

Since it's probably user error, luci must be updated with a GUI option to switch the router over to AP.

In case it's a bug, I'll tell you what I did. 

I disabled: Authoritative This is the only DHCP in the local network.

I switched LAN to 192.168.1.3, and gateway to 192.168.1.2, which is my router.

------ Note: Found a bug? Gateway was wrong, and pinging out didn't work. But after fixing the gateway, pinging 8.8.8.8 works, and your ping does not. Some weird DNS problem?

root at OpenWrt:~# ping -c 4 downloads.lede-project.org
ping: bad address 'downloads.lede-project.org'

Continuing on: For LAN, I set Ignore interface Disable DHCP for this interface. 

Also for LAN, I set Firewall to unspecified, and then removed the firewall package from System Software.

And that's all I remember for now...
