Well, examining the config.log, the header version check for {gmp,mpfr,mpc}.h succeeds; the actual error arises shortly thereafter when linking; I've attached config.log.

It mostly boils down to:
ld: lede-project/source/staging_dir/host/lib/lib{mpc,mpfr,gmp}.a(obj.o): relocation R_X86_64_32 against `.rodata.str1.1' cannot be used when making a shared library; recompile with -fPIC
