I can confirm that Shairport-sync, alsamixer, aplay, etc. do work with a usb sound card without the /proc/asound directory - which would suggest that ALSA does work fine without the directory.  

The issue I found was I was using /proc/asound/card0/pcm0p/sub0/hw_params to confirm the bitrate the card was actually playing, and /proc/asound/card0/stream0 to list the cards capabilities.
