It seems that there is `log_hostname` which - if unset - defaults to `/proc/sys/kernel/hostname` which in turn carries whatever value was set as global hostname.

That name is also passed as `-h` to the log process - what exactly is not working there? Can you provide the output of `ubus call service list` along with your `/etc/config/system` ?
