Hostapd with bonding

Just theoretically you can see that it will be hard to increase
bandwidth using multiple APs on the *same* channels.  About the best you
are likely to achieve is three APs on the three non overlapping
channels, and then bond those however you wish (but expect most bonding
implementations to perform poorly over any channel with variable
latency, eg wireless...)

You might see better performance simply partitioning the machines
manually amongst the three wireless APs?
