No need for such hacks. Leave the rc script as is, and add the
following two lines at the bottom of /etc/syslog.conf:
!hostapd
*.* /var/log/hostapd.log
My /etc/hostapd.conf file contains the following logger settings:
logger_syslog=-1
logger_syslog_level=1
logger_stdout=-1
logger_stdout_level=2
